Chicken Broccoli Cheddar Casserole

3 boneless chicken breasts Note (1)

1 package frozen Broccoli Spears Note (2)

2 cans Cream of Mushroom Soup

½ block Sharp Cheddar Cheese (shred or cut into small pieces to melt in soup)

Salt

Pepper

 

Place Frozen Broccoli in baking dish. Lay chicken breast on top of frozen broccoli. Lightly salt and pepper chicken. (More salt & pepper will be added to soup & cheese mixture)

 

Cook mushroom soup according to directions, add cheddar cheese and melt. Add Salt & Pepper to soup mixture while cooking. S&P to taste.

 

Pour soup with melted cheddar cheese over chicken and broccoli and cover with foil.

 

Cook at 375 degrees for about 45 minutes to an hour, or until chicken is done. Remove foil and place small slices of cheddar cheese on top of each piece of chicken while foil is removed and continue to bake uncovered for additional 15 minutes.

 

(1)   You can cut up the chicken into smaller pieces before cooking if desired.

(2)   Broccoli Florets can also be used. Broccoli pieces not recommended.

 

Serve over buttered egg noodles or rice, or good alone.

 

Leftovers broccoli and sauce makes great soup. Just add a little cream and reheat.

Sounds really good! Broccoli and cheese soup is one of my favorites!
